Cauliflower Pizza with luganega pork sausage

Ingredients

Doses for 1 pizza

  • Cauliflower 1 kg
  • Rice flour 30 g
  • Grana Padano 50 g
  • Egg whites
  • Powdered nutmeg
  • Salt
  • Pepper

To garnish

  • Broccoli head, boiled
  • Peppers in oil
  • Luganega sausage
  • Garlic 1 clove

Preparation

Clean

Clean the cauliflower, remove the outer leaves and stalk and keep only the white florets.

Blend

Put the cauliflower florets, rice flour, Parmigiano-Reggiano, egg whites, nutmeg, salt and pepper in a mixer and blend to obtain a damp, floury mixture.

Bake

Transfer the mixture into a pizza tray lined with baking paper, smooth with a spoon and create a slightly higher crust, then bake in a pre-heated oven at 180 °C for 20 minutes.

Cut

Meanwhile dice the sausage, remove the skin and fry in a pan with a garlic clove until cooked; remove the sausage from the pan and fry the broccoli for 5 minutes, then set aside.

Bake

Remove the pizza from the oven, add the broccoli, sausage and a few pieces of pepper in oil, then cook for a further 5/10 minutes.
Remove from the oven and serve warm.
