Chick peas with black cabbage and crumbled sausage

  • Dry chick peas 400 g, or tinned chick peas 500 g
  • Mantua-style Pork Sausage
  • Garlic 1 head
  • Black cabbage 1 kg
  • Tomato sauce 50 g
  • Salt
  • Pepper
  • Extra-virgin olive oil

Preparation

Soak

Soak the chick peas overnight and boil in plenty of salted water; alternatively, use good-quality cooked chick peas.

Fry

Fry the chick peas in a pan with extra-virgin olive oil, salt, pepper and tomato sauce.

Fry

In another pan, fry the crumbled Mantua-style pork sausage: the end result must be crispy. When cooked, remove from the pan and keep warm.

Cook

In the pan you cooked the sausage in, cook the black cabbage with a head of garlic and a little extra-virgin olive oil.

Place

Place the chick peas, black cabbage on each plate and sprinkle with the crispy sausage crumbs.
