Baked pork coppa rolls with lemon

Ingredients

  • Pork coppa rolls 350 g
  • 3 Untreated lemons
  • Extra-virgin olive oil
  • Cane sugar 1 teaspoon
  • Cornflour 1 spoon
  • Water200 ml
  • 2 Sprigs of rosemary
  • Salt
  • Pepper

Preparation

Wash

Wash and slice a lemon; squeeze the other two.

Mix

Heat the sugar and water in a pan over a hot flame until the sugar dissolves, then add the juice of the 2 lemons and mix well; add the cornflour and mix with a whisk to obtain a smooth cream, season with salt and pepper, then remove from the heat and set aside.

Place

Meanwhile, oil an oven dish with olive oil and place the pork coppa rolls in it with a slice of lemon, the sprigs of rosemary, a little oil and bake at 180 °C for 7 minutes.

Remove from the oven

Remove the rolls from the oven and serve with the lemon sauce.
