How to prepare it

Pour

The black grapes, already cleaned (from the seeds if there are any), must be poured into a pot together with the sugar.

Mill

When it softens, it is passed to the vegetable mill and put back in the pot, letting it shrink;

Paprika

Finally, it is best with paparika and lemon juice.

Cauliflower

The cauliflower, on the other hand, must be cut very thin, if you have a mandolin available it is better to obtain a carpaccio type.

Dish

We proceed with the dish: carpaccio alternated with cauliflower, grape sauce, raw extra virgin olive oil, Maldon salt and raspadura.
