Pizza with Mantovana and candy onions

Ingredients for 2 pizzas:

  • Fiorani Mantuan sausage 5 pieces
  • Red onions 2
  • Brown sugar 1 tbsp
  • Salt 8 g + to taste
  • 00 flour 250 g
  • Manitoba flour 250 g
  • Water 300 g
  • Extra virgin olive oil 40 g
  • Dehydrated brewer’s yeast 3.5 g
  • Tomato puree 300 g
  • Mozzarella fior di latte 300 g
  • Cherry tomatoes 5-6
  • Oregano to taste



Candy onions

Finely slice the onions and put them in a pan to brown with the sugar. When they wilt, add some salt and a few drops of water. Stew for half an hour over very low heat and then set aside.


Mix water, oil and salt. Add the flour and yeast to mix everything with the emulsion. Once you have a firm dough, let it rise for 2 hours in the oven with the courtesy light on, covered. Divide it into two portions and roll it out to obtain 2 discs of 30 cm each in diameter.


Season with tomato and bake at 230 ° C for 10 minutes. Remove from the oven, add the chopped mozzarella, the onions and the crumbled sausage. Bake again for another 5-10 minutes. Serve with oregano.
