Saltimbocca with baked vegetables

  • Very thin 8 slices of Fiorani pork
  • 8 slices raw ham
  • Sage 8 leaves
  • Butter 80 g
  • 00 flour to taste
  • White wine 200 g
  • Broth 1 ladle
  • Extra virgin olive oil 50 g
  • Salt and pepper
  • 1 red peppers
  • Potatoes 2
  • Zucchini 1
  • Half eggplant




Wash and cut the vegetables into small pieces, sprinkle them with oil and cook them in a static oven at 190 ° C for 45 minutes. Salt and pepper. Keep aside.


Place 1 slice of ham on each slice of meat. Place 1 sage leaf on top of the ham, and block everything with a wooden toothpick. Flour the saltimbocca. Heat a pan and brown 1 drizzle of oil.

Cook in the pan

Cook the floured saltimbocca in the pan, turning them over. Deglaze with the wine and cover with a lid. Set the meat aside.

The souce

In the same pan, keep the cooking sauce of the meat. Add the butter and broth to thicken. Add the saltimbocca and cook for 5 minutes. Pepper and serve with baked vegetables.
