Cut of beef with artichokes fried in mustard

  • Roast beef steak Fiorani 135 g
  • Clean artichokes 500 g
  • Flour 00 50 g
  • Medium eggs 2
  • Mustard powder 1 teaspoon
  • Extra virgin olive oil 1 tablespoon
  • Instant sourdough yeast 5 g
  • Salt and pepper to taste
  • Peanut oil 500 g
  • Rosemary 1 sprig



Fry the artichokes

Cut the artichokes into ribs and keep them in water and lemon. For the batter mix flour, mustard, eggs and yeast, and beat with whips, pouring the oil evo. Dip the drained and buffered artichokes, then fry them in peanut oil at 175 C. Season with a little salt.

Cook the cut up

Meanwhile, heat a pan very well without adding seasonings. Blanch the cut with its marinade, a few minutes on all sides. Serve it hot, still pink to the heart.


Serve the cut with salt and rosemary, accompanied by salad and tomatoes. Next, the artichokes fried hot.
