  • 4 marinated pork loin tagliata cuts
  • Ground pistachios 150 g
  • EVO oil as required
  • Potatoes 800 g
  • White yogurt 125 g
  • Mayonnaise 30 gr
  • Sweet mustard 30 g
  • Chives to taste
  • Salt and pepper

Prepare

First of all prepare the potato salad: boil the potatoes in the skins in salted water for around 30 minutes; drain and leave to cool.

Mix

Now prepare the dressing: mix the yogurt, mayonnaise, mustard and chives and season with salt and pepper. Once cooled, peel and dice the potatoes, place in a bowl and mix with the sauce. Mix delicately and place in the fridge for at least 30 minutes to allow the flavors to mingle together.

Coat

Now prepare the tagliata: finely chop the pistachios and coat the pork loin tagliata.

Cook

Cook the tagliata in a pre-heated oven at 180 °C for 15 minutes and, once cooked, serve with the potato salad.
